Summer Tomatilla Salsa
I stumbled upon this Tomatilla Salsa recipe on Honestly Yum and made it last night to go along with chicken tacos. Although I altered the recipe slightly, using only ingredients I had on hand which meant green onions instead of spring onions and adding a little garlic and lime juice, I was very happy with how it turned out and it was super easy! Here is what I did…
- 1 pound of tomatillos, husked
- 5-6 medium green onions
- 1/2 a bunch of cilantro
- 1 jalapeno
- 1 garlic clove
- juice of half a lime
Grill the onions, tomatillas, jalapeno and garlic for about 5 minutes. This should char the outside of the veggies just a bit.
Once you pull the above ingredients off the heat cut them into smaller chunks and place them into a blender or food processor. Depending on how hot you like your salsa, you may want to remove the seeds from the jalapeno. I sliced my jalapeno down the center and removed about half the seeds but included the rest in my food processor because I wanted a little spice.
Once the first ingredients are blended add a bit of salt and the cilantro to the food processor or blender and pulse again until it is all incorporated and blended together.
I served mine on chicken tacos but it would be great with chips for an appetizer as well!
